Fruit Bars

 

  • 1 cup all-purpose flour – for Gluten-free: I’ve used Krusteaz All Purpose Gluten-Free flour with great results. I’ve also used Rice flour, which works well although the consistency is a little more flaky.

 

  • ¾ cup quick-cooking oats

 

  • 1/3 cup granulated sugar

 

  • ½ cup butter, room temperature

 

  • ½ cup + 1/3 cup of fruit jam of your choice. I have used Strawberry, Apricot and Raspberry. I also use Smucker’s Simply Fruit so that there is no added refined sugar.

 

Pre-heat oven at 350˚F. If using a toaster oven, there is no need to pre-heat.

Line an 8-9” square baking pan with foil.

Bake for 25-30 minutes or until edges are golden

 

Mix flour, oats and sugar in a large bowl.

 

Add butter and blend to the consistency of course crumbs, by using a pastry blender or two butter knives or a Kitchenaid type-mixer (which is what I use).

 

Reserve 1 heaping cup of crumb mixture.

 

Press remaining crumb mixture evenly onto the bottom of the foil-lined pan.

 

Spread the fruit jam evenly over the crumbs.

 

Top evenly with the remaining crumb mixture.

 

Bake for 25-30 minutes or until edges are golden.

 

Cool on rack and cut into bar sizes of your choice.
